How To Cook Eggplant Rolls With Cream Cheese In Tomato Sauce - Recipe

Required products :

For the rolls :

  • 2 large aubergines
  • 1/4 tea cup olive oil
  • 1/4 tea cup fresh basil
  • 1 teaspoon cream cheese
  • salt and freshly ground black pepper

For the sauce :

  • 200 grams of canned tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, pressed
  • 1 teaspoon hot red pepper
  • 3 tablespoons tomato paste
  • 1/4 teaspoon sugar
  • 1/2 teaspoon salt
  • freshly ground black pepper

Method of preparation :

  • Wash the aubergines, cut off their edges and cut them into longitudinal slices.
  • Add salt and transfer to a colander to drain for 20 minutes.
  • Meanwhile, prepare the sauce by mashing the tomatoes until smooth.
  • Heat olive oil in a large skillet over medium heat and sauté the garlic for 30 seconds.
  • Add the tomato puree and red pepper. Stir.
  • Add the mashed tomatoes, sugar, salt and a pinch of freshly ground black pepper. Stir and simmer the sauce for about 10-15 minutes.
  • Rinse the aubergines and dry them.
  • Use a brush to smear them with olive oil and grill in a pan for about 3-5 minutes on each side.
  • In a bowl, mix the cream cheese and fresh basil and puree until smooth.
  • Spread the eggplant slice, place 1 tablespoon of the cheese mixture at one end and roll tightly. Repeat with the others.
  • Pour the sauce into a deep yen glass and spread the eggplant rolls on top.
  • Bake in a preheated 180 degree oven for 15-20 minutes.
  • Garnish with fresh basil and serve.
