Required products :

  • 400 grams of eggplant
  • 200 grams of ham
  • 300 grams of tomatoes
  • 200 grams of carrots
  • 2 cloves garlic
  • parsley
  • 2 tablespoons oil
  • black pepper and salt to taste

Method of preparation :

Wash the aubergines, cut them into long pieces about 3 - 5 millimeters thick. Add salt and leave for 30 minutes and then rinse with cold water (this will remove their bitterness).

Cut the tomatoes into small cubes, grate the carrots, chop the parsley finely, mash the garlic with a press.

Fry the carrots in oil for 5 minutes, add the tomatoes, then the garlic, parsley, add salt and pepper to taste, fry everything briefly and leave to cool.

Fry the aubergines in oil until golden on both sides. Remove them on a paper towel to drain off excess fat.

Cut the ham into small pieces.

Put 1 tablespoon of the stuffing and a little ham on each eggplant. Roll up the rolls, which you attach with a toothpick.

Arrange them in a suitable plate, pour the remaining vegetable mixture, sprinkle with chopped parsley and serve.
