How To Cook Eggplant Rolls With Minced Meat In Tomato Sauce - Recipe

Necessary products:

 

  • 2-3 eggplants
  • 1 bunch fresh onions
  • 500 grams of flavored minced meat
  • 2 peeled carrots
  • 1 teaspoon paprika
  • salt, pepper
  • 1 pinch of savory
  • 500 grams of soft tomatoes
  • 1 onion
  • 5 grams of sugar
  • a few sprigs of fresh parsley
  • 1 teaspoon paprika
  • oil for stuffing

 

Method of preparation:


Wash the aubergines, dry them and cut them into slices. Add salt to each side. Blanch or grill them until soft. Set the finished aubergines aside and make the filling.

Heat the fat in which to fry the finely chopped fresh onions and grated carrots. Add the minced meat and season with paprika, black pepper, salt and savory. Cool the mixture and take one slice of eggplant. Spread one tablespoon of stuffing on each and roll.

Arrange them in a greased pan and make the sauce. Heat the oil, heat it and fry the finely chopped old onion. Grate the tomatoes, add them and season with sugar, chopped fresh parsley and red pepper.

Stir and simmer the sauce over low heat until reduced. Pour it on the eggplant rolls, preheat the oven to 200 degrees and bake for 20-25 minutes. Cool, pour portions and serve the dish garnished with freshly chopped green spices.
