Cut the eggplant into 5 mm thick slices.
Coat the eggplant with olive oil and season.
Bake in a pan for 2-3 minutes on each side, allow the eggplant to cool.
In a bowl, mix the za'atara with pomegranate, half the mint. From the mixture put at one end of the eggplant and roll, stick in each cocktail stick or toothpick.
