How To Cook Eggplant Roses With Herbs And Parmesan - Recipe

Required products :

  • 2 tablespoons olive oil
  • 170 grams of grated Parmesan cheese
  • 2 tablespoons fresh herbs, finely chopped / basil, thyme, etc./
  • 1 kg long and thin eggplants

Method of preparation :

 

  • Preheat the oven to 200 degrees and grease with olive oil a standard muffin tin with 12 slots / or 2 molds with 6 slots /.
  • In a small bowl, combine the parmesan and chopped fresh herbs. Stir and set aside.
  • Wash the aubergines well and dry them with kitchen paper.
  • Remove the stalk and leaves and cut them lengthwise into thin slices.
  • Arrange 4 slices in a column, slightly overlapping their edges.
  • Spread on them about 2 tablespoons of Parmesan cheese mixture.
  • Roll up and place in the nest. Repeat with the other products.
  • Sprinkle the eggplant roses with the remaining Parmesan cheese and bake for about 20-25 minutes until golden brown.
  • Allow them to cool for 5 minutes before removing them from the pan.
  • Serve them warm, garnished with fresh parsley leaves.
