Required products :

200 grams of arugula
200 grams of cherry tomatoes
400 grams of eggplant
60 milliliters of balsamic vinegar
60 grams of pine nuts (other nuts or seeds of your choice)
80 milliliters of olive oil

Preparation :
Wash and dry the arugula. Cut the aubergines into circles and fry in a little olive oil. Roast the nuts (or seeds) in a dry pan.
Put the arugula in a suitable container, sprinkle with balsamic vinegar. Spread the eggplant pieces, cherry tomatoes, cut in half on the green leaves and pour olive oil.
Sprinkle the salad with nuts or seeds and you can serve.
