How To Cook Eggplant With Couscous And Cucumber And Tomato Salad - Recipe

Required products :

  • 4 aubergines, cut lengthwise
  • 3 teaspoons olive oil
  • 100 grams of Arabic couscous
  • 1 teaspoon spice ras el hanut
  • 1/2 cucumber, finely chopped
  • 2 tomatoes, finely chopped
  • 1 small head of red onion, finely chopped
  • 30 grams of parsley, finely chopped
  • 30 grams of mint, finely chopped

Method of preparation :

Preheat oven to 200 degrees.

Make square cuts in the eggplant without reaching the rind, so as not to divide the vegetables into pieces. Brush with olive oil and bake for 30 minutes.

Meanwhile, pour the couscous and spice chickpeas with 200 milliliters of hot water. Cover and let stand 10 minutes. Add the mint to the couscous and stir.

Meanwhile, mix the vegetables and most of the parsley in a bowl.

With a metal spoon, lightly press the inside of the eggplant to make a recess in it, where you put the couscous. Drizzle with olive oil and bake on high heat for 3-4 minutes.

Serve eggplant with cucumber and tomato salad.
