How To Cook Eggplant With Roasted Peppers - Recipe

Required products :

  • 2 aubergines, medium in size
  • 2 tablespoons olive oil
  • 1 red onion, finely chopped
  • 2 red peppers, cleaned of seeds and cut into short strips
  • 150 grams of cherry tomatoes, cut into quarters
  • 1 chopped garlic clove
  • 1/2 teaspoon plain sugar
  • 2 tablespoons vinegar
  • a small bunch of basil, finely chopped

for serving:

  • 50-70 grams of orzo pasta
  • 3 tablespoons olive oil
  • peel of 1 lemon
  • 5 tablespoons chopped basil

Method of preparation :

Cut the eggplant lengthwise and salt. Leave briefly to separate the bitter juice and pat dry with paper.

Coat the cut side with olive oil.

Bake the eggplant on a grill pan or grill until done.

Meanwhile, fry the onion in a little olive oil until golden - about 6-8 minutes.

Add the peppers and after 5 minutes add the garlic and tomatoes. Cook for 3-4 minutes and add sugar and vinegar. After 2 minutes, remove from the heat and season with salt and pepper. Sprinkle with a little basil, keeping one serving.

Put the peppers on the aubergines. Serve on a bed of orzo, sprinkle with finely grated lemon peel and pour a drizzle of olive oil. Finally, sprinkle with some of the separated basil.
