Required products (for 2 servings) :
2 eggs
2 slices of bacon or ham
2 slices of toaster bread
1 tablespoon vinegar
salt to taste
For the sauce:
1 egg yolk
50 grams butter
1.5-2 tablespoons white wine
1 teaspoon lemon juice
salt to taste
Preparation :
Start making the sauce. Cut the butter into cubes. Put the yolk in a bowl with a thick bottom, pour the wine and add a pinch of salt.
Mix well and place the dish in a water bath (in just enough water to cover the bottom of the pan). Add the butter cubes and stir until melted and the mixture is smooth.
Heat the sauce, stirring constantly until it thickens. Be careful not to overheat it, as the yolk and butter will separate. You can remove the container from the pot of water for a short time and put it back in so as not to overheat.
When the mixture thickens, immediately remove from the heat and allow to cool slightly.
Once it cools slightly, add the lemon juice and mix well again. The Dutch sauce is ready.
From the slices, cut out circles using a cooking ring or just use a cup or other suitable shape.
Bake them on both sides in a dry pan. Then put the pieces of bacon in the same dish.
It's time for the eggs. Do not take them out of the fridge beforehand, because the colder they are, the more beautiful the shape will be.
They are cooked without the shell.
Beat the egg whites of the two eggs separately, keep the yolks whole.
Pour water into a saucepan, add plenty of salt and 1 tablespoon of vinegar. When the water boils, add the egg, placing it as close to the bottom of the pan as possible.
The more carefully you place the egg, the more beautiful shape you will get.
It is important that the water does not boil too much, so as not to scatter the protein in it.
Eggs are cooked for between 2 and 5 minutes, depending on the desired readiness of the yolk.
In 2 minutes it will remain completely liquid, and 5 minutes are enough to get a soft creamy consistency.
Remove the finished eggs with a slotted spoon. If the shape is not flat, cut the edges with a knife, giving it a beautiful look.
All you have to do is "assemble" the dish.
Put in a suitable plate one baked round slice, on it a piece of bacon, egg and pour the sauce.
The sandwich is ready. Make one of the other products in the same way.
Serve the delicacy hot, sprinkling with chopped fresh parsley or dill, as well as ground black pepper.
