How To Cook Eggs In Spinach, Milk And Yellow Cheese In The Oven - Recipe

Required products :

  • 220 grams of fresh spinach
  • 2 large eggs
  • 40 grams of yellow cheese, grated
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1/2 cup fresh milk
  • 1/4 teaspoon salt
  • 1 pinch of nutmeg

Method of preparation :

  • Blanch the spinach in a large saucepan with boiling water, then drain and rinse with cold water.
  • Squeeze the leaves to drain off excess water, cut off the stalks and cut.
  • Melt the butter in a small saucepan over medium heat.
  • Add the flour and mix vigorously until a homogeneous mixture is obtained, taking care that the flour does not turn brown.
  • Remove the pan from the heat, add the milk and stir until smooth.
  • Return the mixture to the hob and stir constantly until it thickens and simmers.
  • In a large bowl, mix the chopped spinach, milk mixture and grated cheese. Stir and season with salt and nutmeg.

 

  • Divide the mixture into 2 pots or transfer it to a larger fireproof container.
  • Make egg nests and place the pots in a cold oven.
  • Bake at 230 degrees for about 10 minutes. Remove from the oven, beat the eggs and bake for another 10-12 minutes.
  • Serve the pots warm with toasted bread slices.
