Boil the eggs hard (8 minutes) and when cool, cut in half lengthwise. Remove the yolks and mash them with a fork. Grate the cheese on a fine grater, add half of it to the yolks together with the cream, season with salt and pepper, mix thoroughly. Fill the egg whites with the resulting mixture and arrange them in a fireproof dish.
Peel onions and peppers, cut them into small cubes. Fry on medium heat for 3 minutes. Then add the tomatoes together with their juice and wait for everything to boil over high heat, stirring for 5 minutes until the liquid evaporates. Pour this sauce over the eggs. Sprinkle with the remaining cheese and place in the oven for 10 minutes at 180 degrees. Sprinkle the finished dish with chopped parsley and serve while hot (maybe with rice).
