Required products :

  • 1 tablespoon olive oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, pressed
  • 1 medium red pepper, finely chopped
  • 4 teaspoons canned tomatoes, drained and sliced
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 5-6 eggs
  • fresh parsley, chopped

Method of preparation :

  • Heat olive oil in a large skillet over medium heat.
  • Stew onions and garlic for 1-2 minutes until soft.
  • Add the pepper and cook for another 5-7 minutes, stirring occasionally.
  • Pour the tomatoes and tomato paste, mix and season with paprika, salt and freshly ground black pepper.
  • Let the sauce simmer for 3-4 minutes and carefully beat the eggs, distributing them in the pan and being careful to keep them whole.
  • Cover with a lid and wait for them to cover for about 10 minutes.
  • Sprinkle with fresh parsley and serve.
