How To Cook Eggs In Tomato Sauce With Chickpeas And Spinach - Recipe

Eggs in a rich tomato sauce with chickpeas and spinach for a quick vegetarian dinner. Serve with a piece of crispy bread.

Required products :

  • 2 tablespoons extra virgin olive oil
  • 4 cups baby spinach, chopped
  • 4 cloves garlic, chopped
  • 2 cups canned tomatoes
  • 1 can of chickpeas, rinsed
  • 1/4 cup cooking cream
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 tablespoon fresh thyme, chopped
  • 1/2 teaspoon ground black pepper

Method of preparation :

Heat olive oil in a large skillet over medium heat. Add the spinach and garlic. Cook, stirring, until the spinach softens and the garlic begins to brown.

Reduce heat to medium. Add the tomatoes, chickpeas, cream and salt. Adjust the heat to keep it boiling. Stir often so as not to burn.

Beat the eggs one by one, first in a small bowl, then pour into the pan, making small wells for each of them. Sprinkle with thyme. Cover and cook until done.

Serve on a plate and sprinkle with black pepper.
