Required products :

  • 3 young aubergines
  • 4 eggs
  • 3 tablespoons oil
  • 3 - 4 cloves of garlic
  • 2 tablespoons parsley (dill), finely chopped
  • ground black pepper
  • left

Method of preparation :

Wash and dry the aubergines. Peel a squash, grate it and cut it into small cubes. Pour them into a large sieve, add salt and leave for 15 - 20 minutes. Then rinse and drain the water.

Heat the oil in a thick-bottomed pan and fry the aubergines in it for a few minutes, shaking the pan.

Peel the garlic, chop finely, add salt, pepper, oil, mash and add to the eggplant.

Stir, close the pan with a lid and simmer on low heat for about 10 minutes. Then remove the lid, beat the eggs and fry everything on high heat for 1-2 minutes.

Sprinkle the dish with chopped parsley and serve.

You can add tomatoes if you wish.
