Peel, wash and chop the potatoes. Fry them in an oil bath or deep fryer and add salt. Drain them on kitchen paper and place on a plate.
Melt and heat the butter in a pan, beat the eggs and stew for 5 minutes. Take them out and place them on the potatoes. Saute garlic cloves in the same fat, sprinkle with black and red pepper.
Stir and spread the mixture over the eggs. Serve the dish warm, garnished with finely chopped parsley. If desired, you can add tomato paste or yogurt.
