Necessary products:

  • 2-3 large eggs
  • 500 grams of ripe tomatoes, peeled and grated
  • 1 onion, cut into crescents
  • 1 carrot, peeled and grated
  • 250 grams of boiled pumpkin
  • salt, black and red pepper to taste
  • a few leaves of fresh mint
  • a few sprigs of fresh parsley
  • 1 clove of garlic, pressed
  • 150 milliliters of tomato juice
  • 1 teaspoon sugar
  • olive oil for frying

 

Method of preparation:

In a pan, heat olive oil and fry tomatoes, onions, carrots. Stir, mix the pumpkin with the tomato juice, sugar, salt, black and red pepper and beat until smooth.

Pour the mixture over the vegetables and season with finely chopped mint and parsley leaves. Add the garlic and beat the eggs.

Cover the pan with a lid and cook for 10-12 minutes on low heat. Arrange the dish on a plate and serve warm, garnished with fresh spices.
