Required products :

4 large eggs
280 grams of spinach
3 tablespoons leeks, chopped
2 tablespoons chopped onion
2/3 tea cup of yogurt
1 clove of garlic, halved
2 tablespoons butter, unsalted
2 tablespoons oil
1 teaspoon fresh lemon juice
1/4 teaspoon chili
1 teaspoon oregano
salt to taste

Method of preparation :

In a small bowl, mix the yogurt with the garlic and a pinch of salt.
In a large skillet, melt 1 tablespoon of butter over medium heat.
Stew leeks and onions for about 10 minutes until soft.
Add spinach, lemon juice and season with salt to taste. Stir and cook for another 4-5 minutes.
Transfer the spinach mixture to a greased pan and form 4 nests.
Gently tap 1 egg in each.
Bake in a preheated 200 degree oven for about 10-15 minutes or until the egg whites turn white.
In a small saucepan, melt the remaining 1 tablespoon of oil over medium heat.
Season with 1/4 teaspoon chili and a pinch of salt. Mix well and after 1-2 minutes sprinkle with oregano.
Remove the garlic halves from the yogurt.
Serve the spinach nests, garnished with a spoonful of yogurt and sprinkled with flavored butter.
