How To Cook Eggs With Yogurt And Stuffing (Panagyurishte) - Recipe

Learn how to cook "Eggs with yoghurt and stuffing (in Panagyurishte style)". Delicious recipe.

Required products :

  • 2 eggs
  • 1 cup yogurt
  • garlic cloves to taste
  • 1 tablespoon vinegar
  • 1 tablespoon butter
  • 1 teaspoon salt
  • paprika
  • parsley

Method of preparation :

Pour 3 teaspoons of water into a saucepan, add vinegar and salt. When it boils, tap the eggs in it and let it simmer slowly for 4 minutes with the lid closed. Grate the garlic, mix it with the yoghurt (you may not use the whole bucket), put 1/4 teaspoon of salt, stir. Pour the mixture into a plate, remove the finished eggs from the water with a slotted spoon and place them on the milk.

In a small bowl, heat the butter and when hot, add a little red pepper (you can use cayenne), stir, remove from the heat and pour the eggs with the stuffing. Sprinkle with chopped parsley and serve with warm bread.

If you wish, you can also crush the cheese in the milk.

This dish is known as Panagyurishte eggs, although in the original Panagyurishte recipe there is no yoghurt, only cheese. Anyway, the dish is delicious enough, no matter what it's called :)
