About the yeast :
5 grams of wheat yeast with 100% humidity
27 grams of einkorn flour
30 milliliters of water
25 grams of flaxseed
75 milliliters of water
For the dough :
85 grams of einkorn flour
125 grams of wheat flour
10 grams of honey
4 - 5 grams of salt

Method of preparation :
Mix all the yeast products and leave the mixture for 8-12 hours to ferment (the time depends on the room temperature, but it should not be lower than 25 degrees). The finished yeast is covered with bubbles, it becomes "alive" (it is best to prepare at night).
Soak the flaxseed in water and leave for 1 night. In case you forget, you can put it in warm water in the morning, because it swells faster.
Mix all the dough products and knead until it starts to separate from the walls of the bowl and a ball can be formed from it. Finally, add the soaked flaxseed. Form the dough into a ball and put it in a form greased with oil for about 2 - 2.5 hours. After 40 minutes, spread the dough on the work surface, fold the edges inwards, pinch them and return to the bowl. After another 40 minutes, repeat the procedure.
After fermenting, place it on a board and remove the bubbles, being careful not to drop. Give the desired shape and place in a suitable container, cover with a towel and put in an envelope or bag.
Preheat oven to 230 degrees. Make incisions with a sharp knife on the surface of the dough and place it to bake in a suitable pan sprinkled with flour (place it with a wooden spatula sprinkled with flour) or on a stone oven plate, if you have one. If your stove has a steam function, use it, keeping in mind that steam is extremely important during the first 5-7 minutes of baking.
The bread is cooked for 25 minutes until it turns red. Decide if you need another 5 minutes of baking.
