Learn how to cook "Einkorn soup with mushrooms and vegetables". Delicious recipe.
Required products :
100-150 grams of einkorn
30-40 grams of dried mushrooms
2 potatoes
1 carrot
1 onion
100 grams of tomato paste
4-5 tablespoons olive oil
1-1.5 liters of vegetable or meat broth
spices to taste: salt, ground black pepper, oregano
Method of preparation :
Fill the mushrooms with cold water and leave for 20 minutes, then drain the liquid. Filter it, you can use it for soup if you wish.
In a thick-bottomed saucepan, heat the olive oil and fry the finely chopped onions and carrots. Add einkorn, mushrooms and a few minutes later the tomato paste.
Pour the mushroom broth or water, put the peeled and diced potatoes, spices to taste. Allow the soup to boil until all the products are ready.
Serve hot.
