Required products :

  • 50 grams of butter
  • 3 tablespoons olive oil
  • 3 medium-sized leeks, finely chopped
  • 1 teaspoon hot red pepper
  • 1 teaspoon dried mint
  • 1 egg
  • 1 1/2 teaspoons flour
  • 350 grams of whole yogurt
  • 500 milliliters of water
  • 75 grams of browned butter
  • sea ​​salt and pepper to taste

Method of preparation :

 

  • Heat the butter and olive oil in a large saucepan over medium heat.
  • When the oil starts to form bubbles, add the leeks and simmer for 10 minutes.
  • Sprinkle with hot red pepper and dried mint and cook for another 20-30 minutes.
  • Stir periodically until the leeks are caramelized. Remove from the heat.
  • In a large bowl, beat the egg with the flour until smooth.
  • Add the yoghurt and water and stir again.
  • Pour the milk mixture into the pan with leeks, stir and heat over low heat.
  • Stir periodically and be careful not to boil the soup, as it will cross. When you notice small bubbles on the surface, pull it away from the hob.
  • Season with salt and freshly ground black pepper to taste.
  • Heat the butter in a pan over medium heat and stir with a wooden spoon until melted and lightly browned.
  • Serve the empty soup hot, garnished with toasted butter.
