Required products :

for the filling:

  • 1 tablespoon olive oil
  • 2 cloves garlic - crushed
  • 1 onion
  • 1 red pepper
  • 1 jalapeno pepper
  • 500 grams of cleaned shrimp
  • salt and pepper

for the sauce:

  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 1/2 teaspoons fresh milk
  • 1/2 cup sour cream
  • 1 jar of 120 grams of hot green peppers
  • 1 teaspoon cumin

for assembling and serving the dish:

  • 8 tortillas
  • 1 1/2 teaspoons grated Monterey Jack cheese (or other hard cheese)
  • coriander
  • salsa

Method of preparation :

Finely chop the vegetables and prepare them for use.

Fry the garlic in olive oil on medium heat for a minute until it releases its aroma. Add onions, peppers and cook for 6-7 minutes until soft. Finally, add the shrimp, season with salt and pepper. Cook until the shrimp turn pink - about 5 minutes. Remove from the heat.

In a small saucepan, melt the butter over medium heat and add the flour, stirring for about a minute. Add the milk and cream, stirring constantly. Add the finely chopped hot peppers from the jar, season with cumin, pepper and salt. Stew for 5 minutes until the sauce thickens.

Put a thin layer of sauce on the bottom of a rectangular pan.

Put a strip of shrimp in the center of each tortilla cake and sprinkle with cheese. Roll the tortilla and place it with the edge down on the sauce in the pan. Repeat with the remaining loaves.

Finally, pour the sauce and sprinkle with the remaining cheese. Bake until the cheese melts and begins to form bubbles - about 30 minutes. Garnish with coriander and salsa .
