English muffins are not the cupcakes we imagine when we hear their name. In fact, they are round loaves baked in a pan. They are used as cakes for various hamburgers or served with a traditional English breakfast. Here's how to prepare them:

Required products :

  • 1 cup fresh milk
  • 2 tablespoons crystal sugar
  • 1 packet of dry yeast
  • 1 teaspoon warm water
  • 1/4 cup fat of your choice (oil, butter, olive oil, etc.)
  • 6 tea cups self-swelling flour
  • 1 teaspoon salt
  • 2 tablespoons cornmeal

Method of preparation :

In a saucepan, bring the milk to a boil, then remove from the heat. Add the sugar and stir to dissolve. Allow to cool until the milk is slightly warm, it should not be hot.

In a bowl, mix warm water and yeast. Wait for it to swell for about 10 minutes.

In a large bowl, mix the milk, yeast, fat and add 3 teaspoons of flour. Knead using a food processor or by hand. Add salt and more flour until you get a soft dough. (If you are using a food processor, take the dough out of the bowl and mix it on the kitchen counter).

Cover the dough and leave it to rise.

Then press it 2-3 times with your hand down without kneading.

 

Roll it out to a thickness of about 1 cm and cut small round loaves.

 

Line a baking tray with parchment paper and sprinkle with cornmeal, arrange the loaves on top and sprinkle them with some more of the corn product. Cover them with a towel and leave them to rise for 30 minutes.

 

Heat a frying pan (you can also use a grill plate or sach) on medium heat, grease with a little fat and bake the bread for 10 minutes on each side. Put the finished muffins in a warm oven to retain heat while you prepare the rest.
