How To Cook Exotic Couscous With Pistachios And Vegetables - Recipe

Required products :

  • 1 teaspoon couscous
  • 1 teaspoon water
  • 2 carrots, finely chopped
  • 1 red onion, finely chopped
  • 1 small zucchini, finely chopped
  • 2-3 cloves of garlic, cut into slices
  • 1/4 tea cup roasted pistachios
  • dry rosemary
  • salt and freshly ground black pepper
  • 1 tablespoon curry
  • olive oil
  • fresh parsley for garnish

Method of preparation :

  • Heat a little butter or olive oil in a pan over medium heat and saute the garlic for 1-2 minutes.
  • Sprinkle with rosemary, salt and pepper to taste. Stir and cook until lightly browned.
  • Transfer the garlic to a small bowl and saute the chopped vegetables in the same pan for about 5 minutes until soft.
  • Heat the water in a saucepan, along with 1/2 teaspoon of salt, 1 tablespoon of curry and 1 tablespoon of olive oil.
  • After boiling, add the couscous, stewed vegetables, pistachios and fried garlic / set aside part of it for garnish /.
  • Turn off the stove, cover the pot with a lid and let them stand for 5 minutes.
  • Remove the lid and stir with a fork.
  • Serve the vegetable couscous warm, garnished with fresh parsley and fried garlic.
