How To Cook Falafel With Tahini Sauce, Couscous, Green Beans And Feta Cheese - Recipe

Pack your lunch for work or school with Mediterranean-inspired couscous and falafel. You need no more than 20 minutes to prepare it, thanks to the fact that you can get ready-made frozen falafels and vegetables. Make the tahini sauce while the other products are cooking.

Required products :

  • 8-10 falafels (frozen or pre-cooked)
  • 2/3 cup water
  • 1/2 cup couscous
  • 1 packet of blanched green beans (about 450 grams)
  • 1/4 cup kalamata olives
  • 1/4 cup feta cheese, crushed

for tahini sauce:

  • 3 tablespoons tahini
  • 3 tablespoons warm water
  • 2 tablespoons lemon juice
  • lemon zest
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, chopped
  • 1/4 teaspoon salt

* A tea cup is used to measure the quantities.

Method of preparation :

Prepare the falafels in Greek.

Boil the water in a small saucepan, pour the couscous, cover with a lid and remove from the heat. Allow to stand for about 5 minutes until the liquid is absorbed. Stir with a fork and set aside.

* If you use couscous that is not cooked quickly, boil it according to the instructions on the package.

Prepare green beans according to the instructions on the package.

Mix the tahini with the water, lemon juice, olive oil, garlic, salt and lemon zest and divide the sauce into four boxes, close with a lid and store in the refrigerator.

 

Serve the cooked green beans in four boxes and add 1/2 cup couscous, 2 falafels and 1 tablespoon kalamata olives and feta cheese. Close the boxes and store in the refrigerator for up to 4 days.

To serve, preheat in the microwave for about 2 minutes. Drizzle with tahini sauce just before eating.

Tips : Quick and easy to prepare lunch box to school or work, replacing ordinary falafel meatballs, roast meat or fish and couscous instead to add boiled rice or potatoes.
