Required products :

  • 150 grams of bacon, cut into 1-centimeter pieces
  • 3 tablespoons maple syrup
  • 8 well-ripened figs, cut in half
  • 2 tablespoons sherry vinegar (or wine)
  • 1/2 teaspoon hot red pepper flakes - ground

Method of preparation :

Fry the bacon until golden and crispy - about 8-10 minutes. Remove with a slotted spoon and drain on paper, then transfer to a small bowl.

Pour the fat from the bacon, leaving about 2 tablespoons in the pan (instead of throwing away the remaining fat, you can keep it in a jar for the next use). Add the maple syrup and stir to combine with the fat. Cook for a few minutes until the mixture caramelizes (3-5 minutes).

Arrange the sliced ​​figs in a plate and put a piece of bacon on each.

Increase the temperature of the hob and put the vinegar in the hot pan with the caramel and stir. Cook over high heat for 1 minute and pour the resulting syrup over the figs.

Sprinkle with finely ground (or finely chopped) hot red pepper flakes.
