How To Cook Fish Fillet In A Pan With Butter And Herbs - Recipe

Necessary products

  • 2 fish fillets / salmon, sea bass, bream or other oily fish /
  • salt and freshly ground black pepper
  • 3 tablespoons grape or rapeseed oil
  • 2 tablespoons unsalted butter
  • 2 stalks of fresh thyme
  • 1 tablespoon fresh parsley, finely chopped
  • lemon slices

Method of preparation :

  • Dry the fish fillets with kitchen paper and season with salt and pepper on both sides.
  • Heat a large non-stick skillet over high heat and add the oil.
  • Place the fillets in the pan skin side down. If the fish is skinless, press gently with a spatula for about 20 seconds.
  • Reduce heat and fry the fillets for about 2-3 minutes until caramelized and golden at the end.
  • Carefully turn them over with a spatula and add the butter and thyme.
  • Slightly tilt the pan on all sides to distribute evenly.
  • Use a spoon to drizzle the fish fillets with the melted herb oil while frying on the other side for about 1-2 minutes or more, depending on the thickness.
  • Serve warm, garnished with lemon slices and sprinkled with fresh parsley.
