Required products :

  • 500 grams of cherry tomatoes
  • 6 cloves garlic - pressed
  • 2 sprigs of rosemary
  • 200 grams of spicy smoked sausage (like chorizo)
  • 1,300 kilograms of halibut fillet without skin, cut into 8 pieces
  • salt and pepper
  • 4 tablespoons dry white wine
  • 4 tablespoons olive oil

Method of preparation :

Preheat oven to 170 degrees or grill.

Take 4 sheets of foil measuring 30 by 20 centimeters and place them 2 by 2 on top of each other to make the foil twice as thick.

Halve the tomatoes and cut the sausage.

Distribute the tomatoes, garlic, rosemary, sausage and halibut between the two leaves. Add salt and wine and olive oil. Wrap so that no air enters the bags and bake on the grill or in the oven for 15 minutes. Allow to cool for a few minutes at room temperature before opening the bag. Carefully open and transfer the fish to a plateau. Drizzle with the juices released during cooking and tomatoes.
