Required products :
500 grams of eel or cod
1 carrot
1 potato
100 grams of celery root
the white part of 1 stalk of leek
1 teaspoon liquid cream (fat content 25%)
1 egg yolk
1/2 bunch dill
1/2 bunch parsley
a few tablespoons of olive oil
1 bay leaf
5 grains of black pepper
ground black pepper and salt to taste
Method of preparation :
Boil the fish, then take it out of the water and let it cool. Divide into pieces and remove the bones.
Carrots and celery cut into straws, leeks into semicircles, and potatoes into cubes.
Heat the fat in a thick-bottomed saucepan and fry the leeks until soft. Then add the carrots, celery and let them cook for 10 minutes, stirring constantly. Pour a few cups of broth, put the potatoes and let everything boil for 10 minutes. Followed by bay leaf and black peppercorns and simmer for another 15 minutes under a lid.
Finally add the fish and let it cook for 10 minutes after boiling. Then take it out and distribute it in suitable bowls. Pour some of the broth into a small bowl and add the cream and egg yolk. Stir and pour the mixture over the remaining broth. Add salt and pepper to taste, heat slightly (do not bring to a boil) and pour into bowls over the fish. Sprinkle with chopped parsley and dill.
