Required products :

  • 4 eggs
  • 1/4 tea cup olive oil (60 ml)
  • 2 red onions
  • 2 cloves garlic
  • 1 stalk of lemongrass
  • 1/4 tea cup red curry paste
  • 2 tablespoons brown sugar
  • 800 ml of coconut cream
  • 2 stalks of broccoli (can be replaced with broccoli)
  • 800 grams of baramundi fish fillet (replace with white fish of your choice)
  • juice from 2 lemons
  • 2 tablespoons coriander
  • steamed rice for serving (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 160 milliliters of water

Method of preparation :

Boil the eggs for 7 minutes, then immediately transfer to cold water and set aside. Meanwhile, cut the onion and lemongrass into cubes. Stew them in the fat, along with the crushed garlic cloves and curry paste, do not stop stirring them for 5 minutes until soft.

Mix the brown sugar in the coconut cream and add to the other products in the pot, add 2/3 tea cup of water. Let the mixture simmer for a few minutes. Add the broccoli and baramundi fish. Stir from time to time until the dish is ready and the fish is cooked - no more than 6-7 minutes. Turn off the heat, pour the lemon juice and season with coriander, salt and pepper.
Cut the boiled eggs in half and put them in the curry. Serve with steamed rice.
