Required products :

  • 900 grams of fresh white fish fillet
  • 3 tomatoes
  • 1 sweet pepper
  • 3 sprigs of rosemary
  • 1 stalk of leek
  • 3 cloves garlic
  • small connection sorrel
  • oil
  • salt and pepper to taste

 

Method of preparation :

Wash and dry the fillet. Cut the pepper in half, remove the seeds and cut into wide strips. Wash the tomatoes and cut into small pieces.

From leeks use only the white part, it is cut into circles.

Crush the garlic, chop the rosemary into leaves and finely chop the sorrel.

Heat oil in a suitable pan, pour in the sorrel and garlic, fry for 2 minutes. Then add the fillet (in pieces), stir and 3 minutes later season with rosemary, salt and pepper. Close the pan with a lid and remove from the heat.

Heat oil in another pan and fry the chopped peppers and leeks in it. After 3 minutes, add the tomatoes, add salt, stir and let them cook for another 5 minutes. Add the fish to the vegetables, stir gently and leave the dish on low heat for 3 minutes.

The ragout is ready.
