How To Cook Fish With Cherry Tomatoes, Olives And Capers - Recipe

Required products :

  • 450 grams of fish fillet, which you prefer
  • 400 grams of cherry tomatoes
  • 70 grams of green olives (pitted)
  • 40 grams of capers
  • 1 tablespoon dried basil
  • 2 tablespoons olive oil
  • spices for fish

For the sauce:

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • salt and pepper

 

Method of preparation :

Wash the tomatoes, put them in a pan. Add the olives and capers.

 

Drizzle with olive oil and season to taste.

 

Bake the tomatoes for about 15 minutes (at 180 degrees) until they release their juice.

 

During this time, wash the fish, dry it, cut into pieces, each of which should be not less than 150 grams.

 

When you take the vegetable combination out of the oven, press the tomatoes with a fork to crush lightly.

 

Put the fillet between the tomatoes and olives, spreading some of them on the fish.

 

Mix the ingredients for the sauce (olive oil and lemon juice, seasoned to taste) and pour the products in the pan with it.

 

Bake the dish until ready at an oven temperature of 180 degrees.

 

Serve the fish hot by pouring the sauce formed during baking and garnish with tomatoes and olives.
