Necessary products:

  • 240 g roasted pumpkin puree (inner only)
  • 240 ml skim milk
  • 2/3 tsp stevia
  • 1 stick of vanilla
  • 1 lemon peel
  • 1 tbsp cocoa butter powder
  • 4 egg yolks
  • 1 tbsp strong alcohol
  • 1 tsp olive oil or cocoa butter
  • For coverage:
  • 1 tbsp brown sugar
  • 1 tbsp strong alcohol

Method of preparation:

Cut the vanilla in half lengthwise. Add the seeds and half of the vanilla stick, sliced ​​lemon peel to the milk. Bring to a boil for 10 minutes, strain and remove the crust and stick. Pass the puree through a sieve so that there are no lumps in it. Mix with the milk and heat to about 80 degrees, add the stevia and cocoa butter. In the prepared yolks start pouring a little of the milk mixture with the pumpkin. When the consistency thickens, pour into molds greased with olive oil. Arrange them in a tray lined with paper. Place in a preheated oven to 180 degrees and carefully pour boiling water to reach the middle of the dish. Bake for 30 minutes. The finished cream should "shake" when shaken.

After removing from the oven, allow to cool to room temperature and place in the refrigerator to cool completely. 

 

Before serving, sprinkle the surface with a little brown sugar, add a little strong alcohol and light with a special flambé burner or lighter. The alcohol must evaporate. Serve right now. Another option is to put the molds under a hot grill for 1 minute.
