How To Cook Flamenco Eggs With Potatoes, Tomatoes And Onions - Recipe

Required products :

  • 4 eggs
  • 3 peppers (1 red, 1 yellow, 1 green)
  • 1 onion
  • 1 - 2 cloves garlic
  • 550 grams of boiled potatoes
  • 400 grams of canned tomatoes (maybe fresh)
  • 3 tablespoons oil
  • 1 teaspoon dry green spices of your choice
  • salt and other spices to taste

 

Method of preparation :

Preheat oven to 190 degrees. Peel a squash, grate it and cut it into cubes (about 1 cm).

Heat the oil in a pan and fry the chopped onion in it for about 2 minutes. Then add the garlic cloves, 2 minutes later add the peppers and let everything cook for 8 minutes on low heat.

Pour the tomatoes into the bowl, the dry spices and leave the dish on high heat until thickened, without closing the pan with a lid (stir).

Drain the boiled potatoes from the water and cut them into small cubes.

Add them to the other products, season with salt and pepper and bake in the oven, making 4 indentations in the mixture (you can also use separate suitable molds in which to distribute the dish).

Beat one egg in each prepared place and bake for about 10 minutes (until the egg whites are firm).
