How To Cook Focaccia Sandwich With Pesto And Cherry Tomatoes - Recipe

Required products :

  • 7 grams of dry yeast (1 sachet)
  • 250 grams of flour + more to mix
  • 250 grams of wholemeal flour
  • olive oil
  • 1 zucchini
  • 1 red onion
  • 250 grams of cherry tomatoes
  • 2 teaspoons pesto

Method of preparation :

Dissolve the yeast in 325 milliliters of warm water.

Mix the white and wholemeal flour and add a pinch of sea salt. Make a well in the middle where you pour the yeast. Knead the dough - for about 5-6 minutes. Grease a bowl and place the dough in it, turn it once so that it is spread on both sides, and cover it with foil and a towel. Allow to double in the heat.

Grease a rectangular pan measuring 25 by 35 centimeters with olive oil.

Put the dough in the pan and stretch it to reach the edges. Use your fingers to make indentations on its surface. Drizzle with about 1-2 tablespoons of olive oil. Leave to rise again for 30 minutes.

Turn on the oven to preheat to 200 degrees.

Cut the zucchini, onion and cherry tomatoes. Mix them with a little olive oil and season with salt and pepper. Transfer them to a tray.

Bake the focaccia and vegetables for about 25-35 minutes until the bread is golden and the vegetables are caramelized and softened.

Carefully remove the focaccia from the pan and cool completely.

Cut it in half crosswise to make two pieces of sandwich.

Spread with pesto and add the vegetables. Close the sandwich and cut it into smaller pieces.
