Necessary products :
4 1/4 tea cups of flour

  • 1 packet of dry yeast
  • 1 1/2 tablespoons salt
  • 1 3/4 tea cup of warm water
  • 5 tablespoons olive oil
  • 8 thin slices of bacon, cut in half
  • 9 eggs
  • 2 teaspoons grated cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • freshly ground black pepper to taste
  • 2 tablespoons parsley (petals)

Method of preparation :

Mix the flour, yeast, 1 tablespoon of salt in the bowl of the food processor and make a few pulsations to mix. Add the water and 2 tablespoons of olive oil and again make 12-15 pulsations to combine the products to get a sticky dough.

Grease a large bowl. Flour your hands well and transfer the dough to the bowl, then shape it into a ball. Cover and leave for 1 hour and a half or 2 to double.

Spread a rectangular pan with 3 tablespoons of olive oil. Transfer the dough to the pan and turn it once to spread on both sides. Spread the dough with your fingers over the entire surface of the pan. Cover again and leave to rise again for 1 hour and a half.

Fry the bacon until crispy and drain on paper.

Make 9 wells in the dough using a cup, pressing the bottom into the dough. Bake for 15-20 minutes at 180 degrees. Beat one egg in the well (if necessary, press again with the cup in the same places) and sprinkle on top with chopped fried bacon.

Sprinkle with cheddar and parmesan and season with black pepper.

Return to the oven and bake until the eggs are ready.

Garnish with parsley and serve.
