Necessary products (for two focaccia with a diameter of 24 cm)

 

For the dough:

  • 1 teaspoon mushroom broth (or water)
  • 1 teaspoon dry yeast
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 2 - 3 tablespoons olive oil
  • 2 teaspoons wheat flour
  • 1 cup rye flour

 

For caramelized onions:

  • 1 large onion (red)
  • 1.5 tablespoons butter + olive oil
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dry red wine
  • left
  • pepper

 

For the stuffing:

  • 75 grams of goat cheese
  • 5 - 6 dried tomatoes

 

Method of preparation :

In this case, a bakery is used to knead the dough. Pour the mushroom broth, put the yeast in it, add the two types of flour, add salt, honey, olive oil. Let the bakery do the rest, switching it to the appropriate yeast dough mode for 1 hour and 30 minutes. Meanwhile, caramelize the onions. Cut it into thin slices. Heat the fat in a suitable pan, add the onion and honey. Then pour the vinegar, wine, salt and pepper to taste. Simmer until the liquid evaporates, stirring. Onions should not be dried and fried. Crush the cheese with your hands, cut the dried tomatoes and mix the two products.

Divide the finished dough into two parts. Shape the focaccia by pulling with your hands. Put in a suitable container and leave the dough to rise. Make indentations on its surface with your fingers. Spread with olive oil (you can use the fat from dried tomatoes) and distribute the mixture of cheese and tomatoes and caramelized onions in the resulting "holes". Bake the focaccia in the oven at 200 degrees for 20 minutes.
