Brioche is one of the most famous French breads. It is light and sweet, but at the same time with a rich taste, which makes it applicable for both sweet and savory garnishes.

The bread dough is very tender and easy to work with. You can save the recipe for a Saturday afternoon when you need to indulge in bread and relax while you knead.
Finally comes the hardest part - to be able to resist the fragrant delicious bread until it cools and cut it.

Here's how to make a delicious French brioche bread.

Required products :

  • 2 3/4 tea cups self-swelling flour
  • 1/4 cup skim milk powder
  • 3 tablespoons crystal sugar
  • 1 teaspoon salt
  • 1 teaspoon dry yeast
  • 3 eggs + 1 yolk (save the egg white)
  • 1/4 tea cup warm water
  • 10 tablespoons butter

Method of preparation :

We present you a method of preparation that uses a stationary mixer, but you can knead the dough by hand or in a bakery.  

Prepare the mixer by placing the dough attachment. Pour the flour, powdered milk, sugar, salt and dry yeast into the bowl. Stir 1-2 turns and add the liquid ingredients - eggs and water. Finally add the butter and let the mixer knead the dough.

Transfer the finished dough to a greased bowl and cover. Leave it to rise at room temperature for 45 minutes. Then transfer the dough to the refrigerator and leave it for 8 hours or overnight, but not more than 12 hours.

Transfer the dough to a greased high form. Cover with cling film and leave for 90 minutes until doubled. Spread the dough with whipped egg whites.

Preheat oven to 200 degrees. Bake the brioche for 10 minutes without opening the oven. Then reduce to 170 degrees and bake for another 30 minutes. 

Check with a stick if the bread is ready. If it starts to form a crust earlier, cover it with foil.

Allow the bread to cool for 10 minutes in the form, then transfer it to a wire rack. To preserve its aroma and texture, serve it slightly warm.
