Required products :

  • 110 grams of finely ground almonds (powdered)
  • 220 grams of powdered sugar
  • 25 grams of cocoa powder
  • 4 proteins
  • 50 grams of sugar
  • 30 milliliters of liquid confectionery cream
  • 125 milliliters of fresh milk
  • 125 grams of chocolate

 

Method of preparation :

Ganas (the filling for the sweets) is good to make earlier, as it cools for a long time and cooks quickly.

Cut the chocolate into small pieces, which you add to the boiling mixture of milk and cream. Stir until the chocolate melts and immediately remove the pan from the heat. Transfer the sweet combination to a deep plate, cover with plastic wrap and allow to cool to room temperature. Once this is done, transfer the cream to the refrigerator. Remove it 2-3 hours before using it to make sweets.

Turn the oven to 150 degrees.

Mix the powdered sugar, cocoa and almond powder until smooth.

Beat the egg whites, gradually adding the granulated sugar until the mass becomes shiny. Add the dry mixture, stirring with a spatula. The egg mass should acquire a stretchy consistency.

Fill a pastry syringe with the "dough", using a nozzle with a diameter of about 10 millimeters.

Cover the bottom of the baking tray with baking paper and form circles with a diameter of 3 cm. They must be the same size.

Leave them for 1 hour to form a crust on their surface, then bake in the preheated oven for 15 minutes.

Wait for the finished cakes to cool and spread the chocolate cream on half of them. Put a second pasta on top and serve.
