Required products :

  • 4 medium red potatoes
  • 4 strips of bacon
  • 1 onion
  • 4 heads of young corn
  • 1/4 tea cup chopped parsley
  • 4 eggs

 

Method of preparation :

Cut the bacon into pieces, the peeled potatoes into small cubes, the onion and parsley into small pieces.

Separate the corn kernels from the cobs.

 

Pour the bacon into a non-stick frying pan over medium heat and fry the pieces until they turn brown and crispy.

Put the potatoes in a bowl, add a few teaspoons of the fat separated from the bacon, stir and place the dish in the microwave for 3 minutes, stirring 2-3 times during this time. Then add them to the pan with the bacon along with the onions.

Fry the products, stirring, for about 8 minutes (until golden brown). Then put the corn and parsley next to them.

Stir and reduce the heat to below average.

Make 4 places in the mixture with a spoon and beat the eggs in them. Season with salt and pepper, close the pan with a lid and let the dish cook until the egg whites harden (about 8 minutes).

 

Garnish with the remaining parsley and enjoy!
