Melt the butter in a large pan. Add whole potatoes and season. Fry them, shaking the pan from time to time to roll them in butter on all sides. It is important that the potatoes are distributed only in one row in the pan. Fry them until the butter starts to foam and turn golden - about 5-8 minutes.
Reduce heat to low and add garlic and herbs. Continue to fry until the potatoes begin to darken, and the butter should also have reached caramel color during this time.
Adjust the temperature so that the oil foams slightly. Continue frying until the potatoes are completely soft and ready and the butter is browned - the whole process should take you about 45 minutes.
Remove from the heat and leave the potatoes in the fat for 5 minutes.
