Required products :

1 kg of potatoes
2 small sweet peppers
1 leek stalk
1-2 cloves garlic
salt and ground black pepper to taste
2-3 sprigs of thyme
olive oil or other fat
cheese to taste

Method of preparation :

Peel the potatoes and cut them. Peel a squash, grate it and cut it into long straws. Finely chop the leeks (only the white part), the garlic as well, and cut the cheese into small cubes.

Heat a little fat in a pan and fry the potatoes on both sides, turning them often until a crispy golden crust forms (let them not float in oil, but rather bake). Season with salt and ground black pepper to taste. Pour the cheese cubes over them and mix thoroughly. After 1-2 minutes, transfer to a plate.

In a separate bowl, heat a little more fat, stew the peppers with leeks and garlic for about 10 minutes. Once the vegetable juice has almost evaporated, season with salt and pepper, sprinkle with thyme leaves. Pour them over the potatoes with the cheese and the dish is ready.
