Ingredients needed :

  • 2 medium eggs, egg white
  • 100 grams of sugar crystals
  • 55 grams of powdered sugar
  • 100 grams of ground almonds
  • red confectionery paint
  • raspberry jam

Method of preparation :

  • Grind the almonds and sugar into crystals and mix them.
  • Separate the yolks and beat the egg whites in the snow.
  • Gradually add the powdered sugar to the egg whites without turning off the mixer until you get a thick and shiny mixture.
  • Color with confectionery paint according to the desired color intensity.
  • Separate half of the mixture and mix in the ground almonds and sugar.
  • Mix with the other half and stir until smooth.
  • Prepare two trays that you have previously covered with baking paper.
  • Using a syringe, form circles about 4 cm in diameter and continue until you fill the trays.
  • Lightly tap each tray on the hob to release any air bubbles.
  • Let the pasta rest for about 15-30 minutes. You will notice how slightly they start to dry out.
  • Preheat the oven to 140 degrees and bake for about 15 minutes. The top and bottom should be crispy and softer on the inside.
  • Remove the trays from the oven and allow to cool before peeling off the French pasta.
  • Make a "sandwich" by combining the halves with raspberry jam.
  • Store in the refrigerator for at least a few hours before serving.
