Ingredients needed :

Method of preparation :

Grind the almonds and sugar into crystals and mix them.
Separate the yolks and beat the egg whites in the snow.
Gradually add the powdered sugar to the egg whites without turning off the mixer until you get a thick and shiny mixture.
Color with confectionery paint according to the desired color intensity.
Separate half of the mixture and mix in the ground almonds and sugar.
Mix with the other half and stir until smooth.
Prepare two trays that you have previously covered with baking paper.
Using a syringe, form circles about 4 cm in diameter and continue until you fill the trays.
Lightly tap each tray on the hob to release any air bubbles.
Let the pasta rest for about 15-30 minutes. You will notice how slightly they start to dry out.
Preheat the oven to 140 degrees and bake for about 15 minutes. The top and bottom should be crispy and softer on the inside.
Remove the trays from the oven and allow to cool before peeling off the French pasta.
Make a "sandwich" by combining the halves with raspberry jam.
Store in the refrigerator for at least a few hours before serving.
