Required products :
50 grams of bacon
1/2 onion
1 clove garlic
1 large potato
100 grams butter
1 tablespoon olive oil
2 eggs
1 tablespoon balsamic vinegar
salt, mix of different types of ground pepper, green spices - to taste
Method of preparation :
Cut the bacon into thin strips and fry it in a dry pan.
Remove it on paper so that it absorbs excess fat.
Add 1 tablespoon of the oil to the amount that has separated in the bowl. Fry the finely chopped onion in the mixture until soft.
Then add the chopped garlic clove.
A minute later, remove the vegetables from the pan.
Pour the balsamic vinegar into the fat and let the liquid evaporate.
Add the remaining oil (you can use less than the specified amount) and olive oil.
Pour into the bowl the potatoes that you have previously peeled and cut into small cubes.
Season to taste and cook until golden brown. When it is a fact, add the bacon, onion and garlic.
Beat the eggs with a fork, add salt and ground pepper to taste.
Pour them over the vegetables and leave the dish on the stove until the eggs are ready.
Sprinkle with chopped fresh green spices and serve.
