Once you try this French dish, you will find that plain onion soup can be much tastier than many other specialties. This is one of those dishes that, after the first bite, you start to wonder how you have not tried it before - so simple, but at the same time perfect.

Required products :

  • 1 kg of onion, chopped
  • 5 tablespoons olive oil
  • 6 sprigs of thyme
  • salt and pepper to taste
  • 1 teaspoon brown sugar
  • 2 large cloves of garlic
  • 250 milliliters of dry white wine
  • 1 1/2 liters of beef broth

For the slices:

  • 12 bruschettas in slices
  • 250 grams of Gruyere cheese

Method of preparation :

Cut the onion into crescents and season with salt and pepper. Transfer to a pan and bake for 45 minutes, covered with foil, at 200 degrees. Once the allotted time has elapsed, remove the foil and add the thyme sprigs. Stir, add the sugar and bake for another 15 minutes without covering the pan. When the time is up, add the crushed garlic cloves, stir again and bake for another 15 minutes. 

Remove the pan from the oven, pour the wine and mix well. Wait a few minutes for the bubbles to form.

Transfer the products from the pan to the pan and pour the beef broth. Cover the soup and simmer on medium heat for 10 minutes.

Meanwhile, bake the bruschettas in the oven for 10 minutes, turning them over after 5 minutes.

Pour the soup into fireproof bowls, put two toasted bruschettas on top. Grate Gruyere cheese on them and grill until the cheese is melted. Serve immediately.
