Method of preparation :

  • 1/2 cup macadamia tea
  • 1/2 cup chopped almonds
  • 2 teaspoons powdered sugar
  • 3 proteins
  • 1/2 teaspoon vanilla
  • pinch of salt
  • 1/4 cup grated coconut
  • 1 cup cream of pineapple cream

For pineapple cream:

  • 1/2 cup canned coconut tea
  • 1/4 tea cup butter
  • 1/2 teaspoon vanilla
  • 3 teaspoons powdered sugar
  • 1-2 teaspoons of pineapple juice

Method of preparation :

Finely grind the almonds and macadamia nuts. Add to them 1 cup of powdered sugar and combine well.

In a bowl, beat the egg whites with the vanilla and salt until soft peaks, then start adding the powdered sugar spoon by spoon until it is completely absorbed. Once the egg whites have hardened, add 1/4 of the nuts and mix with a spatula, continuing to add the nuts in portions until combined.

Transfer the mixture to a bag and make the pasta in shallow pans lined with baking paper. Sprinkle half of them with coconut shavings and let stand for 30 minutes.

Bake the sweets in a preheated oven at 160 degrees for 10-15 minutes, you will know that they are ready when you push them and they peel off the paper. Cool completely, then peel off the paper.

Prepare the pineapple filling:

Drain the pineapple in a strainer and save the liquid that separates from it.

Beat the butter with a mixer, when it becomes creamy add the pineapple and vanilla. Beat until well combined, gradually starting to add the sugar. Finally, add 1-2 tablespoons of the juice to get a creamy consistency.

Spread 1 teaspoon of pineapple cream on the sweets that do not have coconut, and put the sprinkled pasta on top.
