Wash the cabbage and cut it into large pieces (schnitzels). In order not to fall apart during cooking, you may not cut the head completely, it will preserve the integrity of the pieces. Carefully put the cabbage in a pot of boiling water (salt it) for 3 minutes. Then drain the liquid and allow the vegetables to cool.
