How To Cook Fresh Potatoes With Turmeric, Mustard And Tomatoes - Recipe

Required products :

  • 1 kg of fresh potatoes
  • 3 tomatoes
  • parsley
  • a pinch or two of turmeric
  • teaspoon coriander
  • teaspoon dry mustard
  • teaspoon grated fresh ginger
  • black pepper to taste
  • 4 tablespoons vegetable oil

 

Method of preparation :

Boil the fresh potatoes in salted water until semi-finished. When cool, cut into large pieces.

Wash, dry and slice the tomatoes.

Pour turmeric, coriander, mustard and black pepper into warm oil (but not boiling). Stir and let the spices heat for 2-3 minutes, stirring during this time.

Add the tomatoes and ginger to them and after a few minutes add the potatoes.

Stir thoroughly and sprinkle with chopped parsley.

Leave the dish on the stove until the potatoes are ready and stir so that the spices cover them evenly and do not burn.

Serve the fragrant potatoes hot with sour cream. An option is to make a yogurt sauce with garlic and lemon juice.
