Required products :

  • 3 small zucchini
  • 1 1/2 teaspoons salt
  • 7 tablespoons olive oil
  • 4 upper chicken legs with skin
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, thinly sliced
  • 1 hot pepper, thinly sliced
  • 1/4 tea cup, pitted olives
  • 1 tablespoon oregano
  • 1 teaspoon grated lemon peel
  • lemon for serving

Method of preparation :

Cut the zucchini lengthwise and with the tip of a knife make squares in it, without cutting completely.

Add salt and leave in a colander to drain. Discard the separated water and dry with a towel.

Meanwhile, put 1 tablespoon of olive oil in a cast iron pan and fry the meat (seasoned with salt and pepper) - place it in a cold pan with the skin facing down and heat to medium. Fry until the skin is golden brown - for about 10-12 minutes. Turn and fry for another 5 minutes, until done. Transfer to a plate, skin side up, so as not to lose its crunchiness.

Fry the zucchini in the same pan, increase the temperature of the stove. When the vegetables turn golden brown, turn and fry on the other side. Transfer to the chicken.

In the pan add 6 tablespoons of olive oil and garlic, when browned, add hot peppers and olives. 3-4 minutes later, remove from the heat and stir in the oregano and lemon zest.

Drizzle the garlic fat over the chicken and zucchini and squeeze some lemon juice on top.
