How To Cook Fried Eggplant Stuffed With Carrots With Walnuts And Garlic - Recipe

Required products :

3 large eggplants
400 grams of carrots
50-100 grams of walnuts
4 cloves garlic
juice of half a lemon
oil
salt, black and red pepper to taste
toothpicks or suitable skewers to attach the rolls

Preparation :
Grate the carrots finely or cut into thin strips, add salt and leave for 20 minutes. Sprinkle with black and red pepper, you can add coriander if desired.
Heat oil, add lemon juice and minced garlic cloves. Pour this combination over the carrots. Stir, press with a suitable weight and let stand for half an hour.
Then remove the object that pressed them and store the fragrant vegetables in the refrigerator for 1-2 hours.
When you take it out, add the walnuts, which you can grind, crush or just cut with a knife.
